Sauce It Up...Italian Style!

Furmano's announces the winner of it's "Get Your Sauce on" recipe contest

Northumberland, PA – February 10, 2006 – The following recipe for “Red and White Clam Sauce” was created by Rhoda Maiani of Chapel Hill, North Carolina and was the winning recipe of Furmano’s “Get Your Sauce on…Italian Style” recipe contest. Using Furmano’s Chunky Crushed Tomatoes with Basil, Garlic & Oregano as the key ingredient in the sauce, Maiani’s recipe is worth every delightful bite.


Ingredients
4 Tbsp. butter
2 tsp. garlic (finely chopped)
1/2 cup sweet yellow onion (finely chopped)
3 Tbsp. parsley (fresh and finely chopped)
2 Tbsp. red bell pepper (finely chopped)
1/4 tsp. salt
3 Tbsp. all-purpose flour
1 6 oz. package white mushrooms (sliced)
1 14 oz. can chicken broth
1 28 oz. can Furmano's Chunky Crushed Tomatoes w/ Basil, Garlic & Oregano
3 doz. Fresh clams in the shell (rinse thoroughly)

Preparation
In a Dutch oven, on the stovetop, melt butter on medium/low. Saute garlic, onion, parsley, bell pepper, and salt for 2 to 3 minutes.

Sprinkle flour over the vegetables and stir to blend in flour. Add the mushrooms to the mixture and continue stirring.

Turn heat down to low. Slowly pour in the chicken broth and continue to stir to thicken the vegetables and sauce. Add the chunky tomatoes. Cover and simmer for 15 minutes.

Add the clams to the pot and cover. Continue to cook on low until clam shells have opened. (approximately 10 minutes.)

Serving Suggestions: Serve over fresh pasta and top with parmesan cheese.
