Ingredients
  • 2 pounds Medium Shrimp, Peeled & Deveined
  • 1 each Green Pepper, Chopped
  • 1 each Onion, Chopped
  • 1 clove Garlic, Minced
  • 3 1/2 cups Furmano's Petite Diced Tomatoes with Green Chilies
  • 1 tablespoon Jalapenos, Chopped
  • 1 each Bay Leaf
  • 1/2 teaspoon Sugar
  • 1 teaspoon Salt
  • 1 tablespoon Canola Oil
Preparation
  1. Heat oil in a 12-inch fry pan.
  2. Add green pepper, onion and garlic. Cook until tender.
  3. Add Furmano's Diced Tomatoes with Green Chilies, jalapenos, bay leaf, sugar and salt. Bring to a boil.
  4. Reduce heat and cover. Simmer for 20 minutes.
  5. Add shrimp. Cover and simmer for 5-10 minutes or until shrimp are done. Do not overcook.
  6. Serve over rice.
