Mexican Gazpacho Chicken

Ingredients
  • 1 5/6 cups Furmano's Diced Tomatoes, Drained
  • 1 cup Avocado, Diced
  • 1/2 cup Cucumber, Diced
  • 1/2 cup Red Onion, Diced
  • 1/4 cup Fresh Cilantro, Chopped
  • 3 tablespoons Lime Juice
  • 1 1/2 teaspoons Salt
  • 1/2 teaspoon Sugar
  • 3 tablespoons Olive Oil
  • 4 each Chicken Breast Halves, Skinned & Boned
  • 8 cups Romaine Lettuce, Chopped
Preparation
  1. Combine the first six ingredients, 1/2 teaspoon salt, and sugar in a medium bowl. Let stand at room temperature.
  2. Heat olive oil in a large saute pan.
  3. Sprinkle chicken with remaining salt and the pepper. Cook until golden brown and cooked through, 4 to 6 minutes per side.
  4. Remove chicken to a cutting board. Cut chicken into 1/2 inch thick slices.
  5. Spread 2 cups chopped lettuce on each of 4 serving plates. Arrange chicken on lettuce and spoon gazpacho mixture over chicken.
