Sauced Up Thai Style Shrimp

Ingredients
  • 2 tablespoons Olive Oil
  • 1 pound Large Shrimp, Shelled & De-Veined
  • 1 1/2 teaspoons Garlic, Minced
  • 1 pound Snow Pea Pods
  • 3 1/2 cups Furmano's Petite Diced Tomatoes
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon Ginger
  • 1/4 cup Chunky Style Peanut Butter
  • 3 cups Rice, Cooked
  • 1 each Lime, Sliced & Halved
  • As Needed Cilantro
Preparation
  1. In a 10-inch skillet, heat oil over high heat. Add shrimp and garlic.
  2. Saute until shrimp are pink and cooked through, about 2-3 minutes. Remove shrimp to plate and keep warm.
  3. Add snow pea pods, tomatoes, cumin, ginger, and peanut butter to skillet. Bring to a boil.
  4. Reduce heat and continue cooking, stirring occasionally, until pea pods are crisp-tender, about 5 minutes.
  5. Return cooked shrimp to skillet. Stir to combine. Remove from heat and serve over cooked rice.
  6. Garnish with lime slices and cilantro sprigs, if desired.

Tip: For a spicier version, add 1 teaspoon crushed red pepper or 1 tablespoon minced jalapeno.
