Spicy Red Clam Sauce

Ingredients
  • 12 ounces Clams, Chopped
  • 2 tablespoons Olive Oil
  • 1 1/2 teaspoons Garlic, Minced
  • 1 teaspoon Crushed Red Pepper Flakes
  • 3 1/2 cups Furmano's Crushed Tomatoes
  • 2 tablespoons Fresh Parsley, Chopped
  • 1 tablespoon Dried Oregano Leaves
  • 1 tablespoon Fresh Ground Black Pepper
  • 1/2 cup Dry White Wine
  • As Needed Salt
Preparation
  1. Open clams; drain liquid through very fine sieve or fine cheesecloth; rinse clams to remove any grit.
  2. Heat oil in large skillet or pot. Add garlic and red pepper flakes and saute about 3 minutes (Do not let garlic burn.)
  3. Add remaining ingredients (add salt slowly and taste).
  4. Bring to a boil, then lower heat and simmer until all surface liquid is gone.
  5. Serve over cooked linguine.
