Ingredients
  • 3 each Stalks Celery, Diced Fine
  • 1 each Large Red Onion, Diced
  • 2 teaspoons Garlic, Minced
  • 3 each Green Onions, Chopped
  • 1 each Green Pepper, Chopped
  • 1 each Red Pepper, Chopped
  • 2 cups Furmano's Black Beans, Drained
  • 2 cups Furmano's Red Kidney Beans
  • 15 1/2 ounces Black Eyed Peas, Drained
  • 3 1/2 cups Furmano's Diced Tomatoes
  • 3 1/2 cups Furmano's Tomato Puree
  • 1 7/8 cups Whole Kernel Golden Corn
  • 2 tablespoons Chili Powder
  • 1 each Small Bunch Cilantro, Chopped
  • 2 teaspoons Salt
  • 1 teaspoon Ground Red Pepper
Preparation
  1. Combine all ingredients in a non metallic bowl.
  2. Cover and refrigerate for 30 minutes.
  3. May be served with tortilla chips.

Tip: This recipe can also be used as a great base for enchiladas and nachos.
