Tomato and Bean Soup Plus

Ingredients
  • 1/4 cup Olive Oil
  • 1 each Small Onion, Chopped
  • 1 each Small Carrot, Chopped
  • 2 each Stalks Celery, Chopped
  • 2 tablespoons Flour
  • 1 5/6 cups Furmano's Whole Peeled Tomatoes
  • 2 cups Furmano's White Kidney Beans
  • 10 1/2 ounces Chicken Stock
  • 1 tablespoon Salt
  • 1 cup Water
Preparation
  1. Place a large stock pot over medium heat; add olive oil, onions, carrots, and celery. Saute until onions become translucent.
  2. Add flour and mix to incorporate.
  3. Put all remaining ingredients into pot and cook about 30 minutes.
  4. Pour everything into a blender and blend until creamy.
  5. Reheat in pot and serve with crackers of your choice.
