Vegan Stir Fry

Ingredients
  • 1 1/2 cups Olive Oil
  • 9 cups Super Firm Tofu, Cubed
  • 4 1/2 cups Red Pepper, Diced
  • 3 cups Green Pepper, Diced
  • 1 1/2 cups Mushrooms, sliced
  • 1 1/2 cups Red Onion, Diced
  • 1/2 cup Garlic, Minced
  • 6 cups Furmano's Black Beans, Drained & Rinsed
  • 1 1/4 cups Soy Sauce
  • 3/4 teaspoon Red Pepper Flakes
  • 3/4 cup Corn Starch
  • 1 1/2 quarts Water
  • 3/4 teaspoon Dry Ginger
  • 1 tablespoon Salt
Preparation
  1. Place a large saute pan over high heat. Add tofu, reduce heat to medium.
  2. When tofu begins to brown, add red pepper, green pepper, mushrooms, red onion, and garlic. Saute until vegetables begin to tenderize.
  3. Add Furmano's Black Beans and heat to 180 degrees.
  4. In a separate container, mix soy sauce, red pepper flakes, cornstarch, water, ginger, and salt.
  5. Pour contents of container into vegetables, then heat to 180 degrees.
