Veracruz Fish Bake

Ingredients
  • 1 pound Fish Fillets
  • 1/2 cup Boiling Water
  • 1 each Red Bell Pepper, Seeded & Julienned
  • 1 each Green Bell Pepper, Seeded & Julienned
  • 2 tablespoons Sweet Onion, Chopped
  • 1 5/6 cups Furmano’s Salsa Style Petite Diced Tomatoes Spicy Green Chilies & Lime
  • 1/2 teaspoon Ground Cumin
  • 1/2 teaspoon Oregano
  • 1/2 teaspoon Garlic Powder
  • 1 cup Mexican Cheese Blend, Shredded
Preparation
  1. Divide fish into 4 servings.
  2. Heat oven to 350 degrees.
  3. Bring 1/2 cup water to a boil over high heat in a small saucepan.
  4. Add peppers and onion to boiling water. Cover, reduce heat to low and boil gently until peppers are tender-crisp, about 3-4 minutes. Drain.
  5. Place 1/4 cup of pepper-onion mixture in the middle of each fish portion. Start with narrow end of fillet and roll.
  6. Place in baking pan with end of fillet underneath.
  7. Mix Furmano’s Salsa Style Petite Diced Tomatoes Spicy Green Chilies & Lime, cumin, oregano, and garlic powder. Pour over fish rollups.
  8. Sprinkle with cheese.
  9. Roast at 350 degrees until fish flakes easily when tested with a fork, about 30 minutes.
