Ingredients
  • 3 1/2 cups Furmano's Whole Peeled Tomatoes
  • 2 cups Black-Eyed Peas, Rinsed & Drained
  • 1 cup Corn, Frozen
  • 1/3 cup Red Onion, Diced
  • 1 each Jalepeno Pepper, Seeded & Chopped
  • 2 tablespoons Vinegar
  • 1 tablespoon Olive Oil
  • 1/2 teaspoon Oregano
  • As Needed Salt
  • As Needed Pepper
  • As Needed lettuce
Preparation
  1. Drain and quarter the Furmano's Whole Peeled Tomatoes, reserving 1/2 can of juice.
  2. Combine all ingredients. Chill.
  3. Serve on lettuce if desired.
