Chicken Stew

Ingredients
  • 1 1/2 pound Boneless Chicken
  • 1 pound Potatoes, Quartered
  • 1 pound Onions, Chopped
  • 1 cup Celery, Diced
  • 1 cup Carrots, Diced
  • 3 1/2 cups Furmano's Stewed Tomatoes
  • 1/2 cup Olive Oil
  • 1 cup Flour
  • 3 tablespoons Salt
  • 1 cup Water
  • 2 tablespoons Salt
  • 2 tablespoons Black Pepper
  • 2 tablespoons Thyme
  • 2 tablespoons Oregano
  • As Needed Crusty Bread
Preparation
  1. Wash chicken and pat dry. Heat pan and add oil.
  2. Mix flour and 3 tablespoons of salt. Dip chicken in salted flour mixture on both sides. Brown both sides of chicken, about 10 minutes.
  3. Add the onions, potatoes, celery, carrots, Furmano's Stewed Tomatoes and water. Add salt, pepper, thyme and oregano.
  4. Cover and cook for 2 hours on medium/high heat. Serve with some crusty bread.
