Ingredients
- 1 1/2 pound Boneless Chicken
- 1 pound Potatoes, Quartered
- 1 pound Onions, Chopped
- 1 cup Celery, Diced
- 1 cup Carrots, Diced
- 3 1/2 cups Furmano's Stewed Tomatoes
- 1/2 cup Olive Oil
- 1 cup Flour
- 3 tablespoons Salt
- 1 cup Water
- 2 tablespoons Salt
- 2 tablespoons Black Pepper
- 2 tablespoons Thyme
- 2 tablespoons Oregano
- As Needed Crusty Bread
Preparation
- Wash chicken and pat dry. Heat pan and add oil.
- Mix flour and 3 tablespoons of salt. Dip chicken in salted flour mixture on both sides. Brown both sides of chicken, about 10 minutes.
- Add the onions, potatoes, celery, carrots, Furmano's Stewed Tomatoes and water. Add salt, pepper, thyme and oregano.
- Cover and cook for 2 hours on medium/high heat. Serve with some crusty bread.
