Drizzle bread slices with olive oil and grill on grill pan. Once grilled, transfer to oven at 250-300 degrees.
Coat large saute pan with 1 tablespoon olive oil and saute diced chicken sausage until cooked through - remove (leaving behind brown bits and remaining olive oil) and set aside.
Add remaining olive oil, onions and garlic to pan - saute until cooked through.
Add chicken sausage back in and add remaining ingredients - white wine, Furmano's Petite Diced Tomatoes, Basil, spinach, and red pepper flakes. Cook until spinach cooks down
Taste and add salt & pepper as needed.
Remove bread from oven.
Scoop tomato, sausage and spinach mixture on top of bread slices, and sprinkle with Parmesan. Enjoy.
Tip: Can substitute turkey sausage for chicken sausage links.
