Fettuccine Neapolitan

Ingredients
  • 12 ounces Fettuccine Pasta
  • 1 tablespoon Olive Oil
  • 1 teaspoon Garlic, Crushed
  • 1 each Onion, Chopped
  • 1 teaspoon Basil, Chopped
  • 1 teaspoon Oregano, Chopped
  • 3 1/2 cups Furmano's Diced Tomatoes
  • 2 1/4 ounces Kalamatos Black Olives, Sliced
  • As Needed Salt and Freshly Ground Pepper
  • 1 each Small Yellow Squash, Sliced
  • As Needed Parmesan Cheese, Grated
  • As Needed Fresh Oregano
Preparation
  1. Cook fettuccine according to package directions.
  2. Meanwhile, heat olive oil in large frying pan and saute garlic, onion, basil and oregano about 4 minutes.
  3. Add Furmano's Diced Tomatoes, olives, salt and pepper and simmer for 5 minutes stirring frequently.
  4. Add yellow squash and simmer for another 5 minutes.
  5. Serve over fettuccine with parmesan cheese and garnish with fresh oregano.
