Ingredients
12 ounces Fettuccine Pasta
1 tablespoon Olive Oil
1 teaspoon Garlic, Crushed
1 each Onion, Chopped
1 teaspoon Basil, Chopped
1 teaspoon Oregano, Chopped
3 1/2 cups
Furmano's Diced Tomatoes
2 1/4 ounces Kalamatos Black Olives, Sliced
As Needed Salt and Freshly Ground Pepper
1 each Small Yellow Squash, Sliced
As Needed Parmesan Cheese, Grated
As Needed Fresh Oregano
Preparation
Cook fettuccine according to package directions.
Meanwhile, heat olive oil in large frying pan and saute garlic, onion, basil and oregano about 4 minutes.
Add Furmano's Diced Tomatoes, olives, salt and pepper and simmer for 5 minutes stirring frequently.
Add yellow squash and simmer for another 5 minutes.
Serve over fettuccine with parmesan cheese and garnish with fresh oregano.
