In a large stock pot, put in the chicken and fill to 3/4 full with water. Cover pot (slightly open); bring to a rapid boil. Drain out all the water.
Add fresh cold water to chicken; bring to a boil. Add celery, carrots, onions, Furmano's Crushed Tomatoes, salt, pepper, and parsley. Cook 2 hours on medium/high heat.
Take chicken out and cool. Take all the meat off the chicken and add back to pot.
Bring to a boil; add egg noodles and cook according to package directions.
