Honey Dijon Chicken Dinner Salad

Ingredients
  • As Needed SALAD
  • 5 cups Arugula, Chopped
  • 5 cups Romaine Hearts, Thinly Sliced
  • 1 each Yellow Bell Pepper, Diced
  • 1 5/6 cups Furmano's Whole Peeled Tomatoes, Wedged
  • 3/4 cup Red Onion Rings, Thinly Sliced
  • 2 cups Black Beans, Cooked & Drained
  • 1 cup Artichoke Hearts, Drained
  • 1/4 cup Capers, Drained
  • 4 ounces Feta Cheese, Crumbled
  • 12 ounces Boneless Skinless Chicken Breast, Cooked & Cut Into Strips
  • As Needed
  • As Needed DRESSING
  • 1/3 cup Olive Oil
  • 1/3 cup Lemon Juice
  • 1 tablespoon Honey
  • 1/4 cup Chicken Broth
  • 2 teaspoons Dijon Mustard
  • 1/2 teaspoon Ground Black Pepper
  • 2 teaspoons Oregano
  • 1 teaspoon Garlic, Pressed
  • 1/4 teaspoon Red Pepper
Preparation
  1. Divide salad ingredients evenly between four large plates.
  2. Combine dressing ingredients in a small jar with a lid. Shake until smooth.
  3. Cover salad with dressing just before serving.
