Ingredients
  • 3 7/8 cups Furmano's Red Kidney Beans, Rinsed & Drained
  • 1 tablespoon Chile Powder
  • 1/4 teaspoon Cumin
  • 1 each Large White Onion, Chopped
  • 1 tablespoon Garlic, Minced
  • 3 5/8 cups Furmano's Petite Diced Tomatoes with Green Chilies
  • 2 cups Cheddar Cheese, Shredded
  • 2 each Boxes Corn Muffin Mix
Preparation
  1. Pour beans evenly into prepared casserole dish.
  2. Sprinkle chile powder and cumin evenly over beans.
  3. Sprinkle onion and garlic over the beans, then spread tomatoes evenly over top.
  4. Sprinkle cheese over the mixture.
  5. Cover with foil and put into 375 degree oven for 30 minutes.
  6. Prepare corn muffin batter.
  7. Take casserole out of oven, uncover and top with corn muffin batter.
  8. Put casserole back into oven, uncovered for 10-15 minutes, until cornbread is golden brown.
