Maura & Cara's Pasta Sauce Penne



  • 1 pound Penne Pasta
  • 1/4 cup Olive Oil
  • 1 cup Carrots, Diced
  • 1 cup Celery, Diced
  • 1 cup Sweet Onion, Diced
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1/4 cup White Cooking Wine
  • 1 5/6 cups Furmano's Diced Tomatoes
  • 2 tablespoons Fresh Basil
  • 1 tablespoon Crushed Red Pepper Flakes
  1. Cook penne pasta in a large pot of boiling water.
  2. Meanwhile, heat olive oil in a large pan. Add diced carrots, celery, and onions, then heat over medium heat until tender.
  3. Add salt and pepper.
  4. Deglaze pan with white wine; add can of Furmano's Diced Tomatoes with juice and stir.
  5. Continue to simmer for ten minutes or until all ingredients have blended.
  6. Pour mixture into a food processor; add fresh basil and crushed red pepper; (you may want omit the red pepper for small children).
  7. Blend until mixture has a saucy texture.
  8. Serve over cooked penne pasta.
  9. Garnish with a sprig of basil.
