Ingredients
1 each Ripe Papaya
1 cup
Furmano's Diced Tomatoes
1 cup Ripe Cantaloupe, Diced Small
2 tablespoons Lime Juice
1 teaspoon Jalapeno Pepper, Finely Minced
1 tablespoon Olive Oil
3/8 cup Mint Leaves, Chopped
As Needed Salt and Pepper
Preparation
Cut papaya in half, remove seeds and peel, then cut into 1/2" pieces.
Drain juice from the tomatoes.
Combine all the ingredients; mix thoroughly.
