Thai Chicken Pizza

Ingredients
  • 2 teaspoons Peanut Oil
  • 1 pound Boneless Skinless Chicken Breasts
  • 7/8 cup Furmano’s Salsa Style Petite Diced Tomatoes Spicy Green Chilies & Lime
  • 1/2 cup Carrot, Grated
  • 2/3 cup Mushrooms, sliced
  • 1/4 cup Green Onion, Diced
  • 1/2 cup Peanut Sauce
  • 2 teaspoons Extra Virgin Olive Oil
  • 1 each Roll Pizza Dough, Chilled
  • 6 ounces Italian Blend Cheese, Grated
Preparation
  1. In skillet, add 2 teaspoons of peanut oil and add chicken breasts.
  2. Brown over medium heat until fully cooked.
  3. Drain liquid from Furmano’s Salsa Style Petite Diced Tomatoes Spicy Green Chilies & Lime, then preheat oven to 400 degrees.
  4. Grate 1 carrot, slice mushrooms, and dice green onion.
  5. Remove chicken from skillet and cut into bite-sized pieces.
  6. Add chicken, 1/2 can of drained Furmano’s Salsa Style Petite Diced Tomatoes Spicy Green Chilies & Lime, and 1/4 of peanut sauce back into pan and cook for 1 minute.
  7. Spread dough and drizzle with 2 teaspoons of extra virgin olive oil.
  8. Spread 1/4 cup of peanut sauce over dough, then spread chicken sauce mixture.
  9. Sprinkle on carrots, and spread mushrooms.
  10. Top with grated Italian blend cheese.
  11. Finish with layer of green onion.
  12. Bake in oven at 400 degrees for 10-15 minutes or until brown.
  13. Cool, cut, and enjoy!
