Curried Chicken Salad

Ingredients
  • 3 cups Cooked Chicken, Cooled & Coarsely Chopped
  • 1 5/6 cups Furmano's Diced Tomatoes, Drained
  • 1 cup Mayonnaise
  • 1 tablespoon Lemon Juice
  • 1 tablespoon Lime Juice
  • 1/2 cup Green Onion, Diced
  • 2 tablespoons Cilantro, Chopped
  • 1 tablespoon Curry Powder
  • 1 teaspoon Paprika
  • 1 teaspoon Crushed Garlic
  • As Needed Salt and Pepper
  • As Needed Baby Spinach
  • As Needed Sliced Cucumbers
Preparation
  1. Combine all ingredients.
  2. Chill in the refrigerator until cold and ready to serve.
  3. Serve on a bed of baby spinach leaves and garnish with sliced cucumbers.

Tip: To change up the flavor of this dish, substitute the chicken with 4 cups peeled, deveined, and cooked medium shrimp.
