Easy Summertime Panzanella

Ingredients
  • 2 cups Romaine Lettuce, Julienned
  • 3 cups Italian Seasoned Croutons
  • 1 5/6 cups Furmano's Italian Style Diced Tomatoes with Basil, Garlic & Oregano, Drained, Reserving Liquid
  • 1 1/2 cups Hothouse Cucumbers, Cubed
  • 8 ounces Tomato and Basil Feta Cheese, Crumbled
  • 1/2 cup Basil, Chopped
  • 1 each Small Red Onion, Thinly Sliced
  • 1/2 cup Kalamata Olives, Pitted & Chopped
  • 5 ounces Italian Salad Dressing
Preparation
  1. Place lettuce in bottom of footed pedestal glass bowl or similar container.
  2. Layer with 2 cups croutons, Furmano's Italian Style Diced Tomatoes with Basil, Garlic & Oregano, cucumbers, 1/2 of feta cheese, 1/2 of basil, then onions and olives.
  3. Top with remaining 1/2 of cheese and 1 cup croutons.
  4. In a small bowl, whisk together the reserved tomato juice, salad dressing and remaining basil, blending well.
  5. Pour dressing over strata, cover and refrigerate at least 2 hours before serving.
