Ingredients
1 5/6 cups
Furmano's Diced Tomatoes
, Drained
1 cup Avocado, Diced
1/2 cup Cucumber, Diced
1/2 cup Red Onion, Diced
1/4 cup Fresh Cilantro, Chopped
3 tablespoons Lime Juice
1 1/2 teaspoons Salt
1/2 teaspoon Sugar
3 tablespoons Olive Oil
4 each Chicken Breast Halves, Skinned & Boned
8 cups Romaine Lettuce, Chopped
Preparation
Combine the first six ingredients, 1/2 teaspoon salt, and sugar in a medium bowl. Let stand at room temperature.
Heat olive oil in a large saute pan.
Sprinkle chicken with remaining salt and the pepper. Cook until golden brown and cooked through, 4 to 6 minutes per side.
Remove chicken to a cutting board. Cut chicken into 1/2 inch thick slices.
Spread 2 cups chopped lettuce on each of 4 serving plates. Arrange chicken on lettuce and spoon gazpacho mixture over chicken.
