Ingredients
- 1 tablespoon Olive Oil
- 1 pound Ground Turkey
- 1 clove Garlic, Minced
- 2 tablespoons Chili Powder
- 1 teaspoon Cumin
- 1/2 teaspoon Oregano
- 3 1/2 cups Furmano's Diced Tomatoes with Green Pepper and Onion
- 2 cups Black Beans, drained and rinsed
- 1 7/8 cups Whole Kernel Golden Corn
- 4 ounces Green Chilies, Chopped & Drained
- 4 cups Tortilla Chips, Crushed
- 2 cups Cheddar Cheese, Shredded
Preparation
- Preheat oven to 350 degrees.
- In a large skillet lightly oiled, brown ground turkey and minced garlic.
- Stir in chili powder, cumin, and oregano.
- Add Furmano's Diced Tomatoes with Green Pepper and Onion, black beans, whole kernel golden corn and green chilies.
- Bring to a boil, reduce heat and simmer 15 minutes.
- Cover the bottom of a 2-quart baking dish with 2 cups of chips. Layer with half the taco mixture. Sprinkle with half the cheese.
- Repeat these layers.
- Bake 15-20 minutes.
