Ingredients
2 pounds Medium Shrimp, Peeled & Deveined
1 each Green Pepper, Chopped
1 each Onion, Chopped
1 clove Garlic, Minced
3 1/2 cups
Furmano's Petite Diced Tomatoes with Green Chilies
1 tablespoon Jalapenos, Chopped
1 each Bay Leaf
1/2 teaspoon Sugar
1 teaspoon Salt
1 tablespoon Canola Oil
Preparation
Heat oil in a 12-inch fry pan.
Add green pepper, onion and garlic. Cook until tender.
Add Furmano's Diced Tomatoes with Green Chilies, jalapenos, bay leaf, sugar and salt. Bring to a boil.
Reduce heat and cover. Simmer for 20 minutes.
Add shrimp. Cover and simmer for 5-10 minutes or until shrimp are done. Do not overcook.
Serve over rice.
