Eggplant Parmesan

Ingredients
  • As Needed EGGPLANT MIXTURE
  • 1 each Eggplant, Peeled
  • 1 cup All Purpose Flour
  • 3 each Eggs, Beaten
  • 2 cups Italian Seasoned Breadcrumbs
  • 1/4 cup Olive Oil
  • 3 1/2 cups Furmano's Crushed Tomatoes
  • As Needed Mozzarella, Shredded
  • As Needed
  • As Needed BEEF MIXTURE
  • 1 pound Ground Beef
  • 1 each Egg
  • 2 cups Italian Seasoned Breadcrumbs
  • 1 teaspoon Garlic, Crushed
  • 1 teaspoon Salt
Preparation
  1. Slice and soak peeled eggplant in salt water.
  2. Pat eggplant dry; coat each slice in the following mixtures: first in flour, then egg, and then Italian breadcrumbs.
  3. Put enough olive oil in hot pan to fry each slice on both sides until brown.
  4. Mix ground beef with egg, Italian breadcrumbs, crushed garlic, and salt and pepper.
  5. Make beef mixture into patties and place each patty between two slices of eggplant.
  6. Top with shredded mozzarella.
  7. Cover with Furmano's crushed tomatoes.
  8. Bake at 350 degrees for 30 to 45 minutes.
