Ingredients
- 1 pound Ground Beef
- 1 teaspoon Chili Powder
- 1 teaspoon Garlic Powder
- 1 5/6 cups Furmano's Diced Tomatoes
- 1/4 cup Vegetable Oil
- 6 each Corn Tortillas
- 1 1/4 pounds Enchilada Sauce
- 8 ounces Mexican Blend Cheese
Preparation
- Brown beef in skillet, drain.
- Stir in spices and tomatoes.
- Heat oil in separate skillet, then cook corn tortillas on both sides until slightly crispy.
- Heat enchilada sauce in pot.
- Dip tortillas in enchilada sauce.
- Place about 3 tablespoons beef mixture in each and roll up, placing in a baking dish.
- Cover all of the enchiladas with remaining enchilada sauce and cheese.
- Bake in 350 degree oven until melted.
