Furmano's Chicken Atlantis



  • 8 ounces Chicken Breast
  • 1 5/6 cups Furmano's Diced Tomatoes, Drained
  • 6 ounces Lobster Tail, De-shelled
  • 1 cup Buttermilk
  • 1 cup All Purpose Flour
  • 2 each Eggs
  • 1 cup Breadcrumbs
  • As Needed Salt and Pepper
  • 4 cups Mixed Field Greens
  • As Needed Grapes
  1. Pound out chicken breast.
  2. Sprinkle small amount of Furmano's Diced Tomatoes onto chicken breast.
  3. Place lobster tail in center and wrap chicken around lobster tail, securing with toothpicks if needed.
  4. Dip into buttermilk, flour, and eggs and roll in breadcrumbs.
  5. Bake at 375 degrees until golden brown.
  6. While the chicken and lobster is baking, clean and wash greens and let dry.
  7. When dry, place greens on two large plates, cover and place in refrigerator until needed.
  8. Remove chicken from oven and let cool.
  9. Remove toothpicks and slice into medallions and place on top of mixed field greens and drizzle with the dressing of your choice.
  10. Toss in the remaining tomatoes and a few grapes for an added treat.
