Pasta with Bacon, Tomato and Romano Cheese



  • 2 tablespoons Extra Virgin Olive Oil
  • 1 cup Bacon, Chopped
  • 1 clove Garlic, Chopped In Half
  • 1/2 cup Large Onion, Chopped
  • 1/2 each Jalapeno Pepper, Chopped
  • 3 1/2 cups Furmano's Diced Tomatoes, Drained
  • As Needed Salt
  • 1 pound Penne Pasta
  • 3/4 cup Romano Cheese, Grated
  1. Saute chopped bacon with garlic and onion in olive oil.
  2. Remove garlic as soon as it begins to brown.
  3. Add jalapeno pepper and drained Furmano's Diced Tomatoes, then salt to taste.
  4. Simmer over medium heat until thickened and hot.
  5. Cook the pasta al dente; drain and place in serving dish.
  6. Pour the tomato sauce over pasta; sprinkle with Romano cheese.
  7. Serve immediately.
