Sandy's Veggie-Beef Soup

Ingredients
  • 1 1/2 pound Stew Beef
  • 1 each Large Onion, Chopped
  • 1 teaspoon Garlic, Minced
  • 1 3/4 pints Beef Broth
  • 1/2 cup Barley
  • 7 cups Furmano's Diced Tomatoes
  • 1/2 each Head Cabbage, Shredded
  • 2 pounds Frozen Mixed Vegetables
  • 2 each Stalks Celery, Chopped
  • As Needed Salt and Pepper
Preparation
  1. Brown stew beef in oil.
  2. Add onion and garlic, broth, barley, and Furmano's Diced Tomatoes.
  3. Add water to sufficiently cover.
  4. Simmer about one hour.
  5. Add cabbage, mixed vegetables and celery.
  6. Add additional water if necessary to cover.
  7. Season with salt and pepper to taste.
