Southwest Chicken Wrap



  • 1 tablespoon Olive Oil
  • 1 each Small Onion, Sliced Thin
  • 1 each Small Red Bell Pepper, Sliced Thin
  • 1 clove Garlic, Crushed
  • 1 5/6 cups Furmano's Petite Diced Tomatoes with Green Chilies
  • 1 pound Chicken Breast, Diced
  • 1 teaspoon Cumin
  • 1/2 teaspoon Crushed Red Pepper
  • 6 each Tortillas
  • 1 each Avocado, Sliced Thin
  • As Needed Sour Cream
  • As Needed Cheddar Cheese, Shredded
  1. In skillet, add olive oil and cook the onions, bell pepper, and garlic until tender.
  2. Drain Furmano's Petite Diced Tomatoes with Green Chilies and add to the vegetables along with the chicken, cumin, and red pepper.
  3. Simmer mixture until chicken is cooked through.
  4. Serve over warmed tortillas with the sliced avocado.
  5. Allow guests to add his or her own sour cream and/or cheese.
  6. Serve with a tossed green salad and tortilla chips.
