Creamy Yucatan Ravioli

Ingredients
  • 2 cups Fresh Spinach
  • 1/2 cup Pumpkin Seeds
  • 1/4 teaspoon Red Pepper Flakes
  • 1 teaspoon Dried Cilantro
  • 1/4 teaspoon Dried Oregano
  • 1 tablespoon Green Onion, Chopped
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 2 cups Alfredo Sauce
  • 1/2 cup Pepper Jack Cheese, Shredded
  • 1 pound Cheese Ravioli
  • 3 1/2 cups Furmano's Diced Tomatoes
Preparation
  1. In a food processor, combine spinach, pumpkin seeds, red pepper, flakes, cilantro, oregano, green onion, salt and pepper.
  2. Process until well combined. Set aside.
  3. Cook and drain the ravioli according to package directions.
  4. While ravioli are cooking, heat alfredo sauce, about 2-3 minutes, using either microwave or stovetop.
  5. Stir the pepper jack cheese into the spinach mixture.
  6. Heat the diced tomatoes, about 1 minute, using either microwave or stovetop.
  7. To serve: spoon the alfredo sauce mixture into a serving bowl; gently stir in the ravioli.
  8. Pour the heated diced tomatoes and spinach mixture over top.
