Santa Fe Four Bean Salad

Ingredients
  • 3 5/8 cups Furmano's Diced Tomatoes with Green Chilies
  • 1/2 cup Furmano's Black Beans, Drained
  • 1/2 cup Pinto Beans, Drained
  • 1/2 cup Furmano's Chick Peas, Drained
  • 1/2 cup Furmano's Butter Beans, Drained
  • 1/2 cup Furmano's Whole Kernel Golden Corn, Drained
  • 1 each Medium Red Onion, Coarsely Chopped
  • 1 each Large Green Bell Pepper, Seeded & Coarsely Chopped
  • 1/2 cup Cilantro Leaves, Loosely Packed
  • 1 cup Creamy Italian Salad Dressing
  • As Needed Salt and Pepper
  • 8 each Iceberg Lettuce Leaves
  • As Needed Sour Cream (Optional)
Preparation
  1. Drain tomatoes, reserving 1/4 cup of juice.
  2. Toss together drained tomatoes with beans, chick peas, corn, onion, bell pepper, and cilantro leaves.
  3. Whisk together salad dressing with reserved tomato juice.
  4. Toss salad mixture with dressing mixture until well blended, seasoning with salt and pepper.
  5. Divide salad onto lettuce leaves to serve.
  6. Garnish with a dollop of sour cream, if desired.
