Ingredients
2 tablespoons Olive Oil
1 pound Large Shrimp, Shelled & De-Veined
1 1/2 teaspoons Garlic, Minced
1 pound Snow Pea Pods
3 1/2 cups
Furmano's Petite Diced Tomatoes
1/2 teaspoon Cumin
1/2 teaspoon Ginger
1/4 cup Chunky Style Peanut Butter
3 cups Rice, Cooked
1 each Lime, Sliced & Halved
As Needed Cilantro
Preparation
In a 10-inch skillet, heat oil over high heat. Add shrimp and garlic.
Saute until shrimp are pink and cooked through, about 2-3 minutes. Remove shrimp to plate and keep warm.
Add snow pea pods, tomatoes, cumin, ginger, and peanut butter to skillet. Bring to a boil.
Reduce heat and continue cooking, stirring occasionally, until pea pods are crisp-tender, about 5 minutes.
Return cooked shrimp to skillet. Stir to combine. Remove from heat and serve over cooked rice.
Garnish with lime slices and cilantro sprigs, if desired.
Tip:
For a spicier version, add 1 teaspoon crushed red pepper or 1 tablespoon minced jalapeno.
