Ingredients
1 dozen Eggs
3 1/2 cups
Furmano's Petite Diced Tomatoes with Green Chilies
2 cups
Furmano's Black Beans,
Drained & Rinsed
1 each Avocado, Peeled, Pitted & Diced
1/4 cup Red Onion, Diced
1 cup Monterey Jack Cheese, Shredded
1/4 cup Fresh Cilantro, Chopped
Preparation
Slightly beat eggs, 2 at a time.
Combine tomatoes, onion, avocado, black beans, cheese and cilantro.
In 8-inch skillet with non-stick cooking spray, cook 2 beaten eggs until set and lightly browned.
Spoon 1/6 mixture over cooked eggs before folding omelet.
Garnish with additional cheese if desired.
