Spicy Sesame Peanut Chicken Salad

Ingredients
  • 3 cups Cooked Chicken, Cooled & Coarsely Chopped
  • 1 5/6 cups Furmano's Diced Tomatoes, Drained
  • 5 ounces Water Chestnuts, Rinsed & Drained
  • 1 cup Plain Yogurt
  • 1 tablespoon Lemon Juice
  • 1 tablespoon Lime Juice
  • 1/2 cup Green Onion, Diced
  • 2 tablespoons Cilantro, Chopped
  • 1 tablespoon Sesame Oil
  • 1 teaspoon Crushed Red Pepper Flakes
  • 1 teaspoon Garlic, Crushed
  • As Needed Salt and Pepper
  • 4 cups Baby Spinach
  • 1/2 cup Roasted Peanuts, Finely Chopped
Preparation
  1. Combine all ingredients (except spinach and peanuts) and chill until cold and ready to serve.
  2. Serve on a bed of baby spinach leaves and sprinkle with finely chopped roasted peanuts.

Tip: For a seafood twist, substitute the chicken for 4 cups medium shrimp.
