Ingredients
3 cups Cooked Chicken, Cooled & Coarsely Chopped
1 5/6 cups
Furmano's Diced Tomatoes
, Drained
5 ounces Water Chestnuts, Rinsed & Drained
1 cup Plain Yogurt
1 tablespoon Lemon Juice
1 tablespoon Lime Juice
1/2 cup Green Onion, Diced
2 tablespoons Cilantro, Chopped
1 tablespoon Sesame Oil
1 teaspoon Crushed Red Pepper Flakes
1 teaspoon Garlic, Crushed
As Needed Salt and Pepper
4 cups Baby Spinach
1/2 cup Roasted Peanuts, Finely Chopped
Preparation
Combine all ingredients (except spinach and peanuts) and chill until cold and ready to serve.
Serve on a bed of baby spinach leaves and sprinkle with finely chopped roasted peanuts.
Tip:
For a seafood twist, substitute the chicken for 4 cups medium shrimp.
