Ingredients
2 tablespoons Extra Virgin Olive Oil
3 tablespoons Fresh Basil Chiffonade
1 cup Baby Spinach
3 1/2 cups
Furmano's Diced Tomatoes
1/2 teaspoon Salt
1/2 teaspoon Freshly Ground Black Pepper
3 cups Spiral Macaroni, Cooked
3 ounces Reggiano/Parmesan Cheese, Shredded
Preparation
In a large saute pan heat the oil and stir in the basil and spinach stirring constantly until the basil and spinach is wilted but not browned.
Stir in the tomatoes, salt, pepper and heat through.
Stir in the macaroni and heat through.
Transfer to a serving dish and top with the shredded cheese.
