Tuscan Tomato-Bean Soup

Ingredients
  • 1 each Onion
  • 3 each Carrots, Peeled
  • 2 each Stalks Celery
  • 1 1/2 teaspoons Garlic
  • 1 each Small Bunch Chard
  • 2 tablespoons Olive Oil
  • 3 1/2 cups Furmano's Diced Tomatoes
  • 1 each Small Chunk Parmesan Cheese
  • 5 cups Furmano's Great Northern White Beans
  • 15 ounces Chicken Stock
  • As Needed Salt and Pepper
  • 1 each Small Bunch Parsley
Preparation
  1. Dice onion, carrot, celery, garlic, and chard.
  2. Saute vegetables in a small amount of olive oil for 5 to 10 minutes.
  3. Add Furmano's Diced Tomatoes, chunk of parmesan cheese, and Furmano's Great Northern Beans.
  4. Add enough chicken stock to cover and simmer for about an hour to blend flavors.
  5. Season with salt and pepper, and garnish with parsley.
  6. Remove cheese, then serve soup.

Tip: To make the soup more filling, small pasta can also be added.
